Refrigerator Pickles

Ingredients

  • 6 cucumbers sliced thin (do not peel)
  • 1 c sliced onions
  • 1 tsp.celery seed
  • 1 c. Vinegar
  • 2 cups sugar
  • 1tblsp salt

Directions

  • Combine last 4 ingredients and mix with cucumbers and onions.
  • Put in covered container and refrig.
  • Leave cover on pickles all the time.
  • Let stand in frig for about 1 week.
  • Keeps up to one year.
  • Do not heat this at any time.

I cut the amount of sugar in half and added fresh dill from Greenspirit..also I let them stand in the frig for a couple hours before we dug in… ( could not help myself) but they really are better if they sit for a couple days or more!!!!! You can add more cucumbers and onions as you eat them.

  1. I’ve got cucumbers coming out of my ears! Sounds like this recipe might have room for some spice! Maybe some Habanero peppers or red pepper flakes?
