Destem kale leaves – how many will depend on the size and how many servings you want. Cut the kale into small pieces. Put in a bowl with some olive oil, lemon juice and a little salt. The amounts will depend on how much kale you have. Start with one-half to one tablespoon of olive oil, a teaspoon of lemon juice and a quarter teaspoon of salt and add more to taste. Mix these together with your hand, squeezing for about 60 seconds. Then add dried cherries, cranberries, raisins or some combination and pine nuts. Toss and enjoy!
