I found a great recipe for a Kale soup with Sweet
Potatoes. You may want to put it in your website!
Sweet Potato Kale Soup (adopted from Taste of
Home)
4 oz fresh kale
1 large onion, chopped
3 1/2 tsp Italian seasoning
2 tsp olive oil
3 cans vegetable broth or chicken
broth
2 cans white kidney beans or cannellini beans,
rinsed and drained
1 lb. sweet potatoes
5 garlic cloves
1/2 tsp salt
1/4 tsp pepper
Cut out and discard the thick stem from each kale
leaf. Coarsely chop kale; set aside. In a large saucepan saute onion
and Italian seasoning in oil until onion is tender.
Stir in the broth, beans, weet potatoes, and
kale. Bring to boil and redue heat; simmer, uncovered for 10 min. or until
potatoes are tender. Yeild: 8 servings ( 2 quarts)
150 cal., / serving, 2 g fat, 0 cholesterol, 836 mg
sodium, 29 g carbs, 5 g fiber, 6 g protein, 2 starch.
