Summer Goulash
Summer squash,
sliced onions, sliced
Garlic (lots!),
chopped tomatoes,
chunked
Basil, chopped ground…beef, turkey, tofu, tvp
Saute the
garlic in extra virgin olive oil for a couple of minutes. Add the onions and
squash and saute until the onions are translucent and the squash has become
somewhat soft. Add the tomatoes and basil and cook the tomatoes down until they
are saucy. Add the ground whatever (it should be pre-cooked) and cook until
all the flavors are mixed. We eat
a lot of this in Pentwater, on vacation and the arrival of tomatoes means its
time again! Often we have pasta with the goulash. Enjoy
