Carmelized Onions on Cornmeal Tart

 

Cornmeal pizza crust

2-3 red onions

olive oil

oregano

thyme

salt and pepper

feta cheese

 

  1. Prepare the cornmeal crust and set aside.
  2. Slice the onions and sauté in the olive oil for a long time (up to an hour), stirring occassionaly, until they are very soft and have begun to carmelize (turn brown and sweet!). Add the herbs to the onions as they cook.
  3. Spread the carmelized onions mixture over the crust, crumble the feta cheese over the top and broil just until the tops of the feta cheese are browned.
  4. Cut into pieces and serve warm or at room temperature!
