2011 CSA Memberships Now Available

Join Greenspirit Farm – Membership now open for Iowa County & Spring Green, WI area residents.

Dodgeville, Wisconsin / Feb. 16, 2011 – Greenspirit Farm (http://www.greenspiritfarm.com/) announced this month that the farm now has 2011 community supported agriculture (CSA) share memberships available for the immediate community surrounding the Dodgeville area, including Iowa County, Mineral Point, Spring Green, Arena, and Plain. In an increased effort to be a center for the community, Greenspirit Farm is focusing their membership drive on the local area. Be a part of it all and help invigorate the area with a place to gather around good people, good food and good stewardship.

Intrested local parties who would like to participate in the bounty of the 2011 growing season should visit the Greenspirit Farm website at http://www.greenspiritfarm.com/ to download and mail in the 2011 Membership form.

We have been certified organic by MOSA (Midwest Organic Services Association) out of Viroqua, WI, since September 30, 2008 and growing sustainably for eleven years! Located in the rolling hills of Southwest Wisconsin, we offer our produce through CSA shares (Community Supported Agriculture shares), from our website and to area restaurants and stores.

Ambrosia

We call this the food of the gods’ because it is so incredibly fantastic! And irresistible…


Chop tomatoes with skins into relatively large chunks, enough to fill a casserole dish (be sure to not go over the top or you will make a huge mess!)


Chop one head of garlic and sprinkle over the tomatoes.


Drizzle extra virgin olive oil over the whole thing.


Bake at 350° F for hours, stirring occasionally until the water is baked off and all you have left is the paste…


Eat on good, crusty bread, or blend, and use as tomato paste in sauces, as pizza sauce, or (again), on good, crusty bread! This freezes well—we often do some as ice cubes and then they can be added to a single serving of pasta. Simply spoon the paste into an empty ice cube tray, freeze and then pop out into a freezer bag when they are frozen.

Refreshing Tomato-Fennel soup

Tomato Fennel Soup

(adapted from Molly Katzen’s Vegetable Heaven)


Fennel bulb and stems, set leaves aside to use later.

One onion

1 tablespoon olive oil

salt to taste

2 cups water

4 tomatoes, chopped

a pinch or two of cayenne, or some chopped hot pepper, to taste

croutons


Finely chop fennel and onion. Saute in olive oil for about 10 minutes until aromatic. Add chopped tomatoes and water and simmer for another 20 minutes. Add hot pepper and either blend for a smoother soup, or leave chunky, as you desire. Serve warm or cold with croutons on top. We added more spice, but without the spice this is still a delightful way to use fennel for a fresh, cleansing flavor. We also sprinkled some snipped leaves on top to make it pretty!
